    • Heat 1 tbsp oil and fry the karuvadu for 2–3 minutes until slightly crispy. Set aside.

  3. Make the masala

    • In the same pan, add remaining oil.

    • Temper mustard seeds & curry leaves.

    • Add onion and garlic; sautΓ© till golden.

    • Add tomatoes and cook till soft.

  4. Add spices

    • Add chili powder, turmeric, coriander powder, pepper.

    • Cook until oil separates.

  5. Add the fried dried fish

    • Mix well and add a little water for desired consistency.

    • Cook covered for 10 minutes on low flame.

  6. Finish

    • Adjust salt (karuvadu is naturally salty).

    • Cook until masala thickens and fish softens.

Serve with

  • Hot rice

  • Curd rice

  • Rasam rice

  • Dosa or idli
